Pumpkin Breakfast Cookies
3 cups old-fashioned rolled oats 1 cup pumpkin puree or sweet potato
1 cup almond flour ½ cup maple syrup
1 tsp ground ginger ½ cup melted coconut oil
2 tsp cinnamon 1 tsp vanilla
½ tsp baking powder ½ cup chocolate chips or raisins
½ tsp salt
Pulse the oats in a blender and add to a bowl with all the dry ingredients and stir well. Add wet ingredients to the dry except the chocolate chips and combine completely before adding the chocolate chips. Bake at 350 degrees for 25-30 minutes, turning once halfway for even baking. Enjoy!!
